We present a home-style take on a drink found on a new cocktail list. This is a party-sized prepared mix that is loaded with the tastes of a Christmas time, which makes it excellent for a holiday party. Save the extra citrus syrup to use in morning drinks, sweets, or to mix another batch of this cocktail.
Bikini Recipe
Makes enough for 10 servings
Ingredients for the Clementine Syrup (produces 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar
For the Cocktail (makes 850ml, to serve 10)
400ml decent vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (as made above)
A few cranberries, to garnish
Mandarin essential oil, to finish
Instructions
Making the Cordial: Put the listed ingredients inside a saucepan, bring to a gentle boil, mixing until the sugar dissolves. Then, take off the stove and leave to reach room temperature fully. Pour into a clean bottle, seal and store in the refrigerator, it can be stored for up to a month.
To make Batch Mix: Mix all the liquids in a large bottle, let it rest for an hour, then filter it best through a fine cloth, so it's completely strained.
When ready to serve: Add 85ml of your premix into your stirring glass containing ice, gently stirring lightly for one minute until cold. Pour to a cold coupe glass or equivalent, decorate with a few cranberries and complete it using a quick spritz of mandarin oil over the top.
